Whole Grain Pancakes


1 cup white whole wheat flour
1 cup all-purpose flour
1/2 cup oat flour
1 1/2 cup oat milk (add more to thin out batter if needed)
2 tsp. apple cider vinegar
1/4 Cup applesauce
1/4 Cup dry sweetener (date sugar, maple sugar, etc.,)
1/2 tsp. vanilla extract
1/2 tsp. cinnamon 
1 1/2 Tbsp. baking powder
1/2 tsp. baking soda 
1/2 tsp. salt

Add all flours, cinnamon, salt, baking powder, baking soda, and dry sweetener to a large bowl. Mix. 
In a small bowl add oat milk and apple cider vinegar. Let sit for ten minutes. Then add vanilla extract, and applesauce. Mix. 
Add wet ingredients to dry ingredients. Mix until combined. Don’t over mix. 
Using a 1/4 C measuring cup, pour batter on to a non-stick skillet over medium heat. Once bubbles form on top, flip pancakes and cook about two more minutes or until golden brown.
